Brownies & Banana Bread for School Bake Sale!

These are photos of the brownies and banana bread made for a school fundraiser. As you can see, each slice was placed on a mini plate and individually packaged, with a simple red ribbon bow tied for a touch of charm and embellishment.
The brownies were from a box mix and the banana bread from a recipe that I found online at the time, no idea from where anymore, that is soo good that I've used it ever since because it is simple, delicious and easy to modify.
Here is the recipe:
1 Large Very Ripe Banana
1 Egg with enough milk to make One Cup of Liquid
1 stick butter, softened
1 tsp vanilla
1 1/2 Cups Flour
1 Cup Sugar
1 tsp Baking Soda
Nuts (if desired)
Mix all ingredients in a large bowl until it is all just incorporated and there are no lumps, ensuring to no mix too long or bread will come out too firm.
Grease bread pan and fill with mixture.
Bake at 350°F for 55 minutes until golden brown and toothpick test for doneness.
Variations/modifications that I have made throughout the years:
- pumpkin puree, apple butter instead of or in addition to banana
- alternative milks instead of regular cow's milk
- coconut oil instead of butter.
- 1/2 cup sugar or 1/2 cup sugar and 1/4 cup honey. This particular substitution works best if you decide to use apple butter.
*Note that any substitution will require that you adjust your baking time, specially if you decide to make muffins or mini loafs and depending on your oven, altitude, etc.
